Raven is correct, the Sensory Technique grants the ability to tell general placement of persons, movement, and whether techniques are being launched but it can't tell you seal formation or if a specific type of projectile was thrown. Like he said "finer details" cannot be ascertained via the Sensory Technique.
My understanding when I asked Chigetsu about this is that he'd need to communicate with the Clams and tell them what to do in instances where their sensory could not assist them. By making them blind and deaf, its harder to make them affected by Genjutsu but the reverse side to that is that they require more assistance and instruction from their summoner than they would normally.
